Description

Ingredients

2 cups shredded carrots

1 tbsp olive oil

1 tbsp lemon juice or ACV

1 tsp Dijon mustard (optional)

Pinch of salt & pepper

1 tbsp chopped parsley or mint


Instructions

Shred fresh carrots using a grater or food processor.

In a small bowl, whisk olive oil, lemon juice, mustard, salt, and pepper.

Pour the dressing over carrots and toss until evenly coated.

Stir in chopped herbs.

Serve immediately or chill for later.

Notes
